Peroxide value is an indicator of oxidative degradation in fats and oils, making it useful for monitoring changes in fat-containing samples. The SafTest™ Peroxide Test Kit quantitatively measures peroxide value, with results reported as milliequivalents of peroxide per kilogram of sample (meq/kg).
The assay uses a calibrated workflow with four calibrators and a control. Prepared samples are analyzed using the SafTest system and may be diluted when required. When dilution is used, the reported analyzer result is adjusted by the user to account for the sample dilution factor. Results may also be calculated as meq/kg of fat when separately determined percent-fat information is available.
