Conalbumin (CA) is a monomeric glycoprotein that makes up approximately 13% of the albumin found in egg white. Conformational studies of the secondary structure of CA have shown that the native a-helical secondary structure falls apart when pH changes from 4.0 to 3.0. Additionally, CA changes from a pre-molten globule state to a molten globule state at pH 4.0 and 3.0 respectively. It is binding protein which can transport metal ions such as Cu2+, Fe2+, Mn2+, and Zn2+.
